Do you have to store eggs in the refrigerator?

Although the egg cartons in the supermarket are usually unrefrigerated on the shelf, eggs should be stored in the refrigerator. Eggs actually have a natural protective layer, the so-called cuticle, which makes them durable for 18 days after being laid. After this period, however, the natural protection is no longer active and the eggs have to be stored in the refrigerator. So it is a precautionary measure because it is easier to keep the eggs refrigerated right away than to have to watch out for the eighteen-day period. However, once the eggs have been cooled, the cold chain must not be interrupted before they are eaten. Condensation forms on the shell through which germs can penetrate the inside of the egg.

After the egg is laid by the chicken, 28 days pass before the best-before date. After that, you should only use raw eggs for foods that are heated to over 70 degrees, for example for scrambled eggs with bacon, even after they have been stored in the refrigerator.

If you want to store eggs in the refrigerator, however, you should not keep them near odorous foods. It is therefore best to place the eggs in the appropriate box or in the egg compartment of the refrigerator to prevent the smell of other foods from being transferred to the egg.

While raw eggs keep for 28 days, when cooked they can be kept in the refrigerator for about two to four weeks. On the other hand, dishes prepared with raw eggs, such as tiramisu, mayonnaise or sugar-egg, should be kept in the refrigerator for a maximum of 24 hours to avoid salmonella infections. You should only use fresh eggs for this. Unprocessed and separated from each other, raw egg yolks and egg whites can be kept in the refrigerator for around two to three days.

In countries like the USA and Canada, eggs must be stored refrigerated in the supermarket. Here, however, eggs are also washed after they have been laid, which destroys the natural protective layer of the product. Accordingly, for hygienic reasons, the eggs can no longer be offered unrefrigerated in the store.
